Keto White Chocolate Truffles Candy Recipe


These keto white chocolate truffles have a soft, creamy filling covered in rich dark chocolate for an indulgent candy treat. They make any occasion a little more special!

Chocolate truffles are the perfect special occasion candy. They’re so delicious, and they always make me think of the holidays or Valentine’s Day.

Of course, I stay away from store-bought versions that are packed with sugar, carbs, and fillers. That’s why I created this easy recipe for keto white chocolate truffles!

They’re perfect whether you’re celebrating something or just want a yummy low carb treat. Coconut butter and mascarpone cheese make the filling soft and creamy, and the dark chocolate outer shell is so rich and delicious. 

Best of all, there is only 1 gram net carb per truffle! You can whip up a batch in a few simple steps, and you’ll end up with 28 total. So plenty to share… but only if you want to!

How to make keto white chocolate truffles

The steps to make these decadent candies are quite simple. Just keep in mind that the filling needs to set in the refrigerator for awhile. So be sure to start the recipe a few hours before you want to eat them.

First, we’ll make the white chocolate filling:

  1. In a small saucepan over low heat, mix together the coconut butter, mascarpone cheese, and powdered sweetener.
  2. Once the mixture is well combined, remove from heat and stir in the whey powder and vanilla extract.
  3. Using an electric mixer, beat the filling until well combined.
  4. Scoop the mixture and form into balls, using your hands if necessary, then place them on a non-stick surface. You should end up with 28 round truffle fillings.
  5. Place the fillings in the refrigerator for several hours to chill.

Once the fillings have set, we’ll prep the chocolate coating and finish making the truffles:

  1. Melt the baking chocolate, cocoa butter, and powdered sweetener over low heat or with a double boiler until the ingredients are completely melted.
  2. Remove the chocolate mixture from heat and stir in the stevia.
  3. Take the truffle fillings out of the refrigerator. One by one, dip a chilled ball of filling into the melted chocolate until completely coated, then set it on a non-stick surface to harden. 
  4. Repeat until all truffles have been dipped into the chocolate coating. You can use any leftover chocolate to drizzle over the truffles if desired. 

Now you have perfect keto chocolate truffles to share with someone you love… or enjoy all to yourself! 

Make sure to store your truffles in the refrigerator until you’re ready to enjoy.

Choosing the flavor for low carb truffles

I love white chocolate candy. In fact, you’ll find white chocolate in quite a few of my recipes, like my sugar free white chocolate, keto white chocolate fat bombs, and white chocolate almond bark.

However, if you want something a little different for these truffles, you can easily change up the flavor. Try swapping the vanilla extract with a different flavor, like almond or even peppermint. 

You could also add additional ingredients. I’m thinking of including some unsweetened dried coconut or cocoa powder!

Instructions

FILLING:

  • Mix together coconut butter, mascarpone cheese, and powdered sweetener on low heat.

  • Remove from heat and stir in whey powder and vanilla extract.

  • Using an electric mixer, beat filling until well combined.

  • Scoop into balls and set on non-stick surface. Shape into balls with hands, if desired.

  • Place in refrigerator for several hours to chill.

CHOCOLATE COATING:

  • Melt baking chocolate, cocoa butter, and powdered sweetener over low heat or double boiler until melted completely.

  • Remove chocolate mixture from heat and stir in stevia and vanilla extracts.

  • Dip chilled balls into chocolate and set on non-stick surface to harden. Drizzle with extra chocolate if desired.

  • Store in refrigerator.

Notes

To make coconut butter, place about 2 cups unsweetened dried coconut flakes into food processor and process until butter forms (about 7-8 minutes). Ways to change the flavor:
  • Try swapping the vanilla extract with a different flavor, like almond or even peppermint.
  • Add additional ingredients like unsweetened dried coconut or cocoa powder to the filling.
