One of my favorite breakfast and brunch recipes of all time is biscuits and gravy. I love the combination of savory, salty gravy on top of a biscuit that soaks it all up. Talk about comfort food – this is it!

Before I made this recipe, my favorite indulgent breakfast was keto french toast slices. I still love those, but this is what I actually crave.

There is something special about enjoying a meal with friends and family that aren’t doing the keto diet. Food is something that brings us together.

This recipe is so comforting and so similar to traditional biscuits and gravy that everyone can eat it together. Make a really big batch- you are going to need extra to share!

How To Make Biscuits And Gravy Low-Carb

Everything about traditional biscuits and gravy is a big no-no on keto diet – everything, except the sausage.

When I set out to make a low-carb version, I knew I had to make some low-carb biscuits and figure out how to create a thick gravy without flour.

I already perfected a recipe for almond flour biscuits, so I just used them again in this meal.

This recipe is perfect even for people who aren’t on the keto diet. It’s gluten-free so if someone you know has celiac, offer to make them this biscuits and gravy recipe. It’s definitely a crowd-pleaser!

How To Make Low-Carb Sausage Gravy

Make this keto biscuits and gravy was a fun challenge! Turns out, the secret to a thick sausage gravy is xanthan gum. When it mixes with the heavy cream and the sausage, it really thickens it up.

I used about ¼ teaspoon in my skillet of gravy. If you want a thicker gravy, experiment with it and keep adding a little bit more ⅛ teaspoon at a time.

You also need to use heavy cream. The heavy whipping cream is what makes it taste so rich and have that iconic white color.

Since sausage gravy shouldn’t taste overly sweet, I cut the heavy whipping cream with unsweetened almond milk. It still kept its white color and full flavor, it just wasn’t as rich and sweet.

Low-Carb Ingredients For Biscuits And Gravy

This entire recipe is pretty low-carb. There isn’t really a way to cut down the carbs any further. It might not have very many carbs, but it has tons of flavor.

The ingredients needed to make the recipe are:

  • One batch of Almond Flour Biscuits
  • Ground Breakfast Sausage: Use sugar-free sausage or meat without any added sugars. The best kind of sausage will have lots of spice to it.
  • Heavy Whipping Cream: This is for the gravy; it makes it really rich.
  • Unsweetened Almond Milk: Helps the gravy go farther without making it taste too rich or sweet.
  • Xanthan Gum: Makes the gravy thicker.
  • Parsley: Optional garnish.

Frequently Asked Questions About Keto Biscuits and Gravy

Before I share this sweet recipe with you all, here are a few questions I wanted to answer first.

What Can I Use Instead of Xanthan Gum?

In my experience, xanthan gum does the best job of thickening the gravy so it looks and feels the most like traditional white sausage gravy.

I’ve seen other recipes that suggest using a combination of cream cheese, heavy cream, and chicken bone broth for the sausage gravy. This could work, it just might make it have a much different texture.

I’ve also seen other recipes that use psyllium husk as a substitute for xanthan gum. In fact, you can use psyllium husk in a 1:1 ration in place of xanthan gum.

How Do You Make It Dairy-Free?

The only way to make a sausage gravy that is dairy-free is to use coconut milk. This will affect the color, taste, and texture of the gravy. Instead of a white gravy like you’re use to the gravy will be more brown.

It’s still a good option if you can’t eat dairy. To keep the thick texture, use full-fat coconut milk. Taste it and add more spices if you think the coconut flavor is too strong.

What Other Meat Can You Use?

Sausage is what biscuits and gravy is known for. It’s the best one because it fries with the perfect amount of fat for the gravy.

I’ve heard of people making bacon gravy, which could be interesting. You could also spice up some ground turkey and use that instead. Ground turkey won’t have the same amount of fat for the gravy, so it will require different amounts of heavy cream and xanthan gum.

How Do You Make The Gravy Spicier?

The easiest way to spice this gravy up is to sprinkle your favorite hot sauce on top!

If you really want more heat, you can also chop up some fresh jalepeño peppers and mix them into the gravy. Be sure to remove the seeds first!

Another really easy way to add spice to your gravy is to sprinkle in a few teaspoons of cayenne pepper and a few sprinkles of red pepper flakes. This will fill your mouth with heat!

How Long Will Keto Sausage Gravy Last?

If you store it in a sealed container in the refrigerator, this gravy should last about 3-4 days. The best way to reheat it is on the stove. Add more almond milk if it’s too thick.

Instructions

  • Prepare biscuits.

  • While the biscuits are baking, add the sausage to a 10-inch skillet over medium high heat on the stove. Sauté, using the spoon to break up the meat, until sausage is completely browned, about 8 to 10 minutes.

  • Add the heavy whipping cream to the skillet, lowering the heat to medium. Sprinkle in xanthan gum, salt, and pepper. Continue to stir and cook the sausage gravy until it has thickened to your liking. Additional xanthan gum can be added for a thicker gravy.

  • Cut the biscuits in half and top with a [¼] of the sausage gravy to serve. Add freshly chopped parsley for garnish, if desired.

Notes

Be sure to use sugar-free sausage or meat without any added sugars. This type of sausage is usually marked as being “paleo” friendly. The best kind of sausage will have lots of spice to it.
Any leftover biscuits or gravy can be stored up to 5 days in the refrigerator or up to 3 months in the freezer. If frozen, it’s best to thaw overnight in the refrigerator before reheating.
Biscuits can be reheated for 20 to 40 seconds in the microwave. Or place them in a preheated oven or the toaster until warmed. Gravy can be reheated in a pot on the stovetop or a dish in the microwave.
